No Grain Bircher Muesli

Bircher muesli is such a classic, easy breakfast that can be prepared the night before and therefore be ready and waiting for you in the morning.  Having no grains, this version is apple based with extra body provided by your LSA and chia seeds. 

Ingredients:1 orange juiced1 apple, grated2 tablespoons LSA (or flaxseed meal for a nut free option)1 tablespoon chia seeds1 teaspoon cinnamon1 teaspoon vanilla extractMethod:Mix together the apple, LSA, chia seeds, cinnamon and vanilla in a small bowl. Set aside whilst you juice the orange. Pour the orange juice over the prepared mixture and mix until well combined. Cover and refrigerate overnight.In the morning you can add to your bircher any toppings you desire:Sliced bananaMixed berriesShredded coconutCacao nibsPumpkin seedsSunflower seedsServes 1
