Coco-berry Delight

Smoothies are definitely my ‘go-to’ breakfasts. I love being able to pack in so much goodness and create lots of different flavour combinations. The chocolate, coconut and raspberries go so nicely together that it really feels like you are having dessert for breakfast.

Ingredients:
¼ cup activated almonds
1 cup frozen raspberries
1 tablespoon raw cacao
2 tablespoons desiccated coconut
2 Medjool dates, seeded
1 tablespoon chocolate pea protein powder
1 cup coconut water

Method:
Place all ingredients in a high speed blender for 60 seconds until smooth and creamy. Serve immediately.

Serves 1

Coconut Fluffy Pancakes

Pancakes are definitely a food that brings me back to my childhood days. Sleepovers, lazy mornings and the famous ‘Alice in Wonderland’ from the Pancake Parlour. These pancakes are inspired from a recipe I saw by Dani Valeni. They are light, they are fluffy and they are very tasty.

Ingredients
5 eggs
70g coconut flour
30g macadamia oil (plus extra for frying)
300ml coconut milk
½ teaspoon vanilla extract
½ teaspoon bi-carb soda
pinch of sea salt

Method
Combine all ingredients together and either mix well by hand or use a blender to combine.

Heat oil in frypan and then pour in the batter (approx. 1/8th cup’s worth). After about to 2-3mins the pancakes start to bubble. At this point flip them for a further 2 minutes of cooking. Continue this process until all the batter is finished.

Top the pancakes with whatever you desire…. honey, maple syrup, chocolate sauce, fruit, shredded coconut or chocolate nibs.

Variations:
Add ½ cup of blueberries to mixture once combined prior to cooking.
Add ½ cup of chocolate chips to mixture once combined prior to cooking

Makes 12 pancakes

Nutty Green Smoothie

I love to start my mornings with a smoothie and this one really hits the spot.  The combination of spinach and fruit makes it sweet and alkalising and with the addition of almond butter, you get a good dose of essential fats that will keep you feeling satisfied and full for hours. 

Ingredients:
2 cups fresh spinach
1 frozen banana (peel banana and put in freezer for at least 3 hours)
1 cup frozen strawberries
¾ cup unsweetened almond milk
3-4 mint leaves
2 tablespoons almond butter

Method:
Place the spinach, strawberries, almond milk and mint into a blender and blend on high until smooth.

Then add the banana and almond butter and blend just enough to mix in the banana. Do not over blend.

Serves 1

Choc-Mint Smoothie

The flavour combination of chocolate and mint is a classic. This smoothie is rich in antioxidants, and provides so much nourishment, it will keep you feeling full for hours.

Ingredients:
1.5 cups almond or cashew mylk
½ frozen banana
2 pitted dates
2 tablespoons cacao nibs
1 tablespoon cacao
½ tablespoon flaxseeds
1 teaspoon vanilla essence
Few drops peppermint essence
Few fresh mint leaves
Handful spinach leaves

Method:
Place all ingredients in a high speed blender and blend until smooth.
If you prefer a little crunch, hold off from adding the cacao nibs until the end and then pulse them in for a few seconds.

Serves 1

Healthy Natural Muesli

For most of us, mornings are a rush to get out of the house. Whether it's to get the kids to school, or to get to work on time, breakfast - which is the most important meal of the day - needs to be a quick and easy meal. After a good night's sleep where our metabolism has slowed down, the first meal of the day needs to kickstart it and get us going for the day. That's why this muesli is such a great option. Once completed, it's sitting there waiting for you in the fridge. The combinations are endless depending on your taste, but here is a simple well balanced recipe to get you started.

Ingredients

250g organic oats
100g almonds, flaked
100g walnuts, chopped
100g sunflower seeds
200g dried fruit (I like to use a combination of mulberries, apple, jumbo raisins, & apricots)
2 tablespoons flaxseed meal
1 tablespoon chia seed
Pinch of cinnamon
Pinch of ground vanilla



Method:

Combine ingredients and store in a glass container in the fridge until needed.

Muesli can be stored for 1 month.

Serves 10

Acai Bowl

Acai berries are considered one of the healthiest berries and one of nature's superfoods. They are low in sugar, anti-oxidant rich, and high in calcium, fibre, iron and vitamin K. The properties contained in acai berries are linked to the prevention of health problems such as arthritis, inflammation, obesity, heart disease, oxidative stress and cancer. With each mouthful you get that burst of chocolate, berry flavour, so no wonder why people question whether it actually is healthy!

Ingredients

1 cup coconut water / almond mylk
1 packet frozen acai
½ frozen banana
¼ cup blueberries
1 handful spinach
1 tablespoon cinnamon
1 tablespoon macca (optional)

Method
Place all ingredients in a high speed blender. Blend until smooth.
Pour into a bowl and serve with toppings such as shredded coconut, fresh berries, cacao nibs, granola or chia seeds.

Serves 1

Cherry Ripe Smoothie

Who doesn’t like a little indulgence in the morning? This recipe brings me back to my childhood days where I used to enjoy the odd cherry ripe every now and again. There’s no guilt in this “guilty pleasure”, as the creation of this smoothie enables me to still get the flavour combination that I love (chocolate and cherries), whilst nourishing my body from the inside out.

Ingredients:
1 cup frozen cherries
1 cup almond mylk
1 large ripe or frozen banana
1 tablespoon cacao
2 pitted dates
1 tablespoon almond butter
1 tablespoon cacao nibs

Method:
Place all ingredients except for the cacao nibs into a high speed blender and blend until smooth.
Add cacao nibs and pulse one or two times. This adds a great crunch to the smoothie.

Kale and Spinach Juice

Detoxification is a process that goes on inside us all day every day. It is essential to remove any substance in that we ingest that could be harmful to our body. One of the best ways to support our natural detoxification is through drinking juices as it allows our digestive system to have a break from working hard to break down our food whilst still absorbing essential nutrients. Kale is recognised as providing comprehensive support to our detoxification system and although it can be bitter in taste, adding pineapple makes this juice a delicious drink to have.

Ingredients:
¼ pineapple, peeled
handful spinach
handful kale, washed and de-stemmed
200ml filtered water or coconut water

Method:
Place pineapple, kale and spinach through a juicer and then add water at the end.
Alternatively, place all ingredients in a high speed blender and blend until smooth.
You may want to strain the juicer prior to drinking to remove excess pulp.

Serves 1

Tropical Green Smoothie

Smoothies are a great way to pack in nutrients, minerals and anti-oxidants whilst giving your digestive system a break. They are easy to prepare and can be drunk on the run. The flavour combinations are endless, but give this one a go for a nice, refreshing summer’s drink.

Ingredients:
1 cup mango, diced
1 cup pineapple, diced
½ frozen banana, sliced
1 cup almond mylk (the recipe is here)
1 cup spinach
2 tablespoons shredded coconut (optional)
sprinkle of cinnamon and nutmeg (optional)
handful ice cubes

Method:
Place all ingredients in high speed blender and blend until smooth.

Serves 1

Chocolate Banana Smoothie

Ooooh how I love smoothies. I love them for breakfast or even as a snack. This chocolate banana smoothie is one of my regulars. It’s packed with so many nutrient rich ingredients, tastes great and will keep you feeling satisfied for ages!

Ingredients
200ml almond mylk (Recipe is here)
½ frozen banana
2 tablespoons cacao nibs
1 tablespoon hemp seeds
1 tablespoon maca powder
1 teaspoon cinnamon
¼ teaspoon nutmeg
½ cup ice
1 scoop protein powder (optional)

Additional superfoods you can add:
1 teaspoon Reishi powder
1 tablespoon flaxseeds

Method
Place all ingredients in a high speed blender and blend until well combined.
For a thicker consistency you may want to add more ice.
